tbsp honey

cup rolled oats

cup wheat flour

tsp baking powder

tsp baking soda

tsp salt

cup granulated sugar

tsp vanilla extract

tbsp unsalted butter

oz cream cheese

cup powdered sugar
Instructions
Bread Batter 1 Preheat Oven to 350 F (176 C) and prepare a 9 x 5 in loaf pan. 2 Hand whisk together oat, flour, baking powder, baking soda, and salt in a medium bowl. Set aside. 3 Combine eggs, apple sauce, both sugars, and vanilla together in the bowl of a stand mixer. Mix together with paddle attachment on medium speed until combined. 4 Scoop flour oat mixture into wet mixture. Blend until a batter is formed. 5 Let batter sit about 10 minutes for oats to soak up some moisture. 6 Fold in cranberries and coconut with a spatula. 7 Spoon batter into prepared loaf pan. 8 Bake for 40-50 minutes or until toothpick inserted into center comes out clean with crumbs. 9 Let loaf cool 10-15 minutes before lifting from pan. Make your Frosting 1 In bowl of stand mixer with whisk attachment, beat cream cheese and butter together until smooth and fluffy. 2 Add vanilla and honey, whip again. 3 Slowly spoon powdered sugar into mixture on medium speed until desired consistency is reached. 4 Spread frosting onto cooled loaf.
